So i've had about 30 Street passes since i've had my 3DS and something crossed my mind the other day, i know that you exchange info with other players as you pass them...

But do you only exchange the info of the game that you have in the console or do you exchange all the info of every game you have..? as long as they have/played it aswell of course ^_^

I don't think so, only the information you choose to have shared in the options of your Mii character.

No you can street pass with 12 different applications or games at a time. Right Now I street pass 3ds Sound, Street fighter, and Mii Plaza. They are street pass settings in the 3ds in the settings!
