I always prefer to use speed over acceleration. I've never believed that slow and steady wins the race. In a race, I believe that you should go Sonic the Hedgehog speeds or go home.

Well speed is good if you want to win
but also when you get hit by an item you need good acceration if you want to contine to be in the lead
I think about 50/50 for each would be a winning kart

I personally try to find a balance between speed and acceleration. For example, my current kart's stats are:
Character: Shy Guy
Speed: 3.75
Acceleration: 3.5
Weight: 1.5
Handling: 4.5
Off Road: 2.5
With the balance between speed and acceleration, I can quickly recover from items while not being extremely slow at the same time. I can see where the weight would be a weakness, but I personally haven't ever gotten knocked off by anyone because I'm aware of my weakness and try to avoid other racers as much as possible. However, I have great flying speed and time because of this. That's how I try to balance out my speed and acceleration.

I like to balance things out with Acceleration, Speed, and Handling (Egg 1 + Mushroom Wheels + Parafoil = FTW). I would say acceleration, because if you're hit by something, you can recover your speed. But without good speed, acceleration is worthless. Which makes them equally useful.

Off topic: But handling is by far the best. It makes drifting and sharp turning easy.

Here's a kart try out:
Bumble-V
Roller wheels
Swooper Glider

With a certain character I can never be beaten unless I get hit continuusly and drive recklessly.

Acceleration over speed all the way! Thought I haven't been playing MK7 only Mario Kart Wii.

For the most part, higher acceleration is superior to speed, usually I try to get a bit more acceleration then speed since I can drift well.

I like to have my speed and acc very close to balanced out but abit more speed than acc so you have a better overall kart

Well, I firmly believe that the driver makes the kart, not vice versa. Use what is most comfortable with you.
